There’s a reason the recipe has reappeared, whether you’ve only recently heard of it as “cowboy caviar” or have fond memories of the simple, nostalgic dish as “Texas caviar.”

The most recent dish to receive millions of searches, views, and attempts from home chefs is this simple, adaptable cowboy caviar recipe.
The Internet Has Become Flooded with Cowboy Caviar Recipe Searches
Let’s go back to the beginning of the food trend to gain a better understanding. On May 17, Madison, Wisconsin resident Bria Lemirande revealed her most recent Trader Joe’s “haul” on TikTok, revealing that she would be preparing cowboy caviar. Her subsequent video showing her making the dip just like her mother did and then eating it with tortilla chips received 1.7 million views.
At the time of publication, TikTok had more than 38.5 million views of the hashtag “cowboy caviar.” Google Trends data shows that the phrase began increasing in search volume the week of May 22, with a notable increase on June 26 that is still heading upward.
Despite the dish’s name, the sturgeon delicacy is not present. According to Thrillist, the dish’s humble beginnings actually go back decades, to the time Helen Corbitt devised it after relocating from New York to Austin in 1940 and creating a menu that made use of Texan ingredients.
According to fellow FeelGoodFoodie blogger Yumna Jawad, who also hopped on the bandwagon, “I think it’s the color, freshness, and crunch of all the ingredients put together in an unexpected way — [it’s] halfway between a salad and a salsa,” what makes this meal so appealing.
Lemirande improved the original recipe by experimenting with a number of different iterations that included ingredients like fresh mango, peaches, or avocado cubes. With over 16 million views and likes overall as of early June, each iteration has steadily gained popularity.
How I consume all of the cowboy caviar is the most frequent query I receive. In one of her videos, Lemirande mentioned cooking the dish. “It just gets eaten when I go grab it and pair it with some chips. A lot of money I also give to relatives and friends.”

I’ve cooked the dish before and have known about it for years, but I honestly forgot about it, Jawad admitted. I finally decided to make it my own spin after witnessing Lemirande share it on TikTok “each time with a different twist and with more eyeballs on the dish,” the author continues.
Internet food bloggers from all over the world have joined the currently popular trend, including Rosalynn Daniels, Eva Amurri, and chef and culinary expert Jake Cohen, who presented his Middle Eastern interpretation of the dish below.
Celebrity chefs like the Pioneer Woman, Ree Drummond, whose recipe debuted on Food Network in 2017, had already promoted the meal.
Using the power of short-form video, Jawad continued, “it’s remarkable how dishes that have been around for a while, like this cowboy caviar or even chia pudding, get reborn on social media these days. I love testing the newest recipes that are becoming viral and kicking some of them off myself, so I’m here for it.
She also offered her best advice to anyone wishing to experiment with the style in their own kitchen: “Finely chop everything. Putting all the ingredients on a chip at once is the ideal way to enjoy a piece of cowboy caviar. Therefore, precisely slicing them ensures that you receive a taste of everything at once.”
Cowboy Caviar Variations
This dish, as many food bloggers point out, can be tailored to your taste preferences because it contains a variety of adaptable, affordable, and simple-to-find ingredients including canned beans and corn. Don’t like the heat? Leave out the jalapeno. Do you desire a fruity beverage? Include some mango. Looking for a version that is more filling? Add some cold, cooked pasta.
Here, Rosalynn Daniels presents her version of the popular recipe for spaghetti salad, while cookbook author and recipe developer Jake Cohen offers his Middle Eastern-inspired twist on it.
Ingredients for Middle Eastern Cowboy Caviar
- 2 (15-ounce cans) of drained chickpeas
- 3 chopped and cored bell peppers
- 3 ears of corn, shucked, with the kernels removed
- Olive oil, 1/4 cup
- a teaspoon of za’atar
- Halal salt
- minced one red onion
- a minced jalapeno, one
- 1 grated, finely minced garlic clove
- Juiced lemons, two
- 1 tsp. of date syrup
- 1 teaspoon of sumac, ground
- 4 diced Persian cucumbers
- 2 diced beefsteak tomatoes
- 2 finely sliced scallions
- minced parsley or cilantro
Directions
Set the broiler to high. Toss the chickpeas, peppers, corn, olive oil, za’atar, and a generous sprinkling of salt to blend and put out in a uniform layer on a sheet pan. For 6 to 8 minutes, broil, turning the pan as necessary, until brown. Cool down.
Combine the red onion, jalapenos, and garlic with the sumac, date syrup, lemon juice, and a generous amount of salt in a large bowl. After 5 minutes, incorporate the cooled corn mixture with the cucumbers, tomatoes, scallions, herbs, and other ingredients. Salt the dish after giving it a last taste and seasoning.
Ingredients for Cowboy Caviar Pasta Salad
- One box or one pound of Ditalini pasta (uncooked)
- 4 bags of corn, frozen
- chopped red onion, half
- 2 sliced green onions
- Chopped cilantro in 1 cup
- 1 jalapeno pepper, chopped small.
- 8 slices of chopped smoked bacon (optional)
- Queso Fresco Cheese, two cups
- 2 large, diced avocados
- 2 cans of rinsed and drained black beans
- Diced cucumber, one
- 2 cups halved cherry tomatoes (optional)
Dressing
Mayonnaise, one cup three freshly squeezed limes 1 lime zest, and 1/2 tsp. cumin Paprika, smoked, 4 teaspoons 1 teaspoon black pepper, 3 teaspoons salt

Directions
All vegetables should be finely chopped and diced. All ingredients should be combined in a sizable basin.
As you add your sauce, stir everything together thoroughly. After one hour in the fridge, serve.
