Ingredients
  

  • 2 cups fresh pineapple chunks ripe and juicy
  • 1/4 cup fresh mint leaves roughly chopped
  • 2 tablespoons lime juice freshly squeezed
  • 1/2 cup water or coconut milk for blending
  • 1 tablespoon honey or agave syrup optional for added sweetness

Method
 

  1. Start by preparing your ingredients: peel and chop the pineapple into chunks, and roughly chop the mint leaves.
  2. Place the pineapple chunks, mint leaves, lime juice, and water or coconut milk into your high-speed blender.
  3. Blend on high until the mixture is completely smooth and fragrant, with no chunks remaining—this should take about 30-45 seconds, and you’ll notice the mixture turning a vibrant yellow-green color.
  4. Taste the blend and, if desired, add a drizzle of honey or agave syrup for extra sweetness; blend again briefly to incorporate.
  5. Pour the smooth mixture carefully into your popsicle molds, filling each about 3/4 full to allow room for expansion.
  6. Insert the sticks into the molds and gently tap the molds on the counter to release any trapped air bubbles.
  7. Place the molds in the freezer and freeze for at least 4 hours or overnight until fully solid.
  8. Once frozen, briefly run the outside of each mold under warm water to loosen the popsicles, then gently pull them out.
  9. Enjoy immediately for the best icy crunch and vibrant flavor, or store in an airtight container in the freezer for up to 3 months.
