White Bean Dip

Ingredients
  

  • cups cooked cannellini beans drained and rinsed
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon lemon zest
  • 1 small garlic clove
  • ½ teaspoon ground cumin
  • ½ teaspoon sea salt or to taste
  • ¼ teaspoon freshly ground black pepper
  • 2 to 4 tablespoons water as needed
  • 2 tablespoons fresh basil or parsley chopped
For Garnishing
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon pomegranate seeds optional

Method
 

  1. Add the cannellini beans, olive oil, lemon juice, lemon zest, garlic, cumin, salt, and black pepper to a food processor.
  2. Pulse the mixture several times until the beans begin to break down and the ingredients are evenly combined.

  3. Process until smooth and creamy, scraping down the sides of the bowl with a spatula as needed.
  4. Add the water, 1 tablespoon at a time, and blend again until the dip reaches your preferred consistency. Avoid adding too much water at once.
  5. Add the fresh basil or parsley and pulse a few times until incorporated. Taste and adjust the lemon juice, salt, or cumin if needed.
  6. Transfer the white bean dip to a serving bowl and use the back of a spoon to create a shallow swirl across the surface.
