Ingredients
  

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 2 cups shredded sharp cheddar cheese
  • cups shredded Monterey Jack cheese
  • 1 cup diced tomatoes with green chilies drained
  • ½ cup finely chopped green chilies
  • 2 garlic cloves minced
  • 1 teaspoon ground cumin
  • ½ teaspoon chili powder
  • ½ teaspoon salt or to taste
  • ¼ teaspoon freshly ground black pepper
  • 2 tablespoons chopped fresh cilantro

Method
 

  1. Melt the butter in a medium saucepan over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant.
  2. Sprinkle the flour over the butter and whisk continuously for about 1 minute to create a smooth base for the cheese sauce.
  3. Slowly pour in the milk while whisking constantly to prevent lumps. Continue cooking for 3 to 5 minutes until the mixture begins to thicken.

  4. Reduce the heat to low and gradually add the shredded cheddar and Monterey Jack cheese. Stir continuously until the cheese melts completely and the sauce becomes smooth and creamy.

  6. Continue cooking for another 1 to 2 minutes until the queso reaches your preferred consistency. If the dip is too thick, add a splash of milk and stir until smooth.
