Ingredients
  

  • 1 pound chicken breast diced
  • 2 cups cooked rice
  • cups pineapple chunks
  • 1 red bell pepper diced
  • 1 cup broccoli florets
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 2 garlic cloves minced
  • 1 teaspoon ginger grated
  • Salt and black pepper to taste
  • 2 green onions sliced

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced chicken and cook until golden brown and fully cooked.
  3. Stir in garlic and ginger and cook until fragrant.
  4. Add bell pepper and broccoli, then cook until slightly tender.
  5. Mix in pineapple chunks and cook for a few minutes until lightly caramelized.
  6. Add soy sauce, honey, salt, and black pepper, stirring well to combine.
  7. Fold in the cooked rice and mix until evenly coated and heated through.
  8. Garnish with sliced green onions before serving.
