  • 2 tbsp chopped fresh herbs parsley or chives
  • 4 oz deli meats ham, salami, or turkey slices
  • 2 small pickles sliced thin
  • 1 tsp spicy mustard
  • 1 tbsp butter or olive oil for brushing

Method
 

  1. Preheat your oven to 180°C (350°F). Slice the bread into 1-inch thick pieces and use a cookie cutter or glass to cut out small rounds or squares, about 2 inches each.
  2. Lightly brush the bread slices with melted butter or olive oil using a pastry brush. Arrange them on a baking sheet lined with parchment paper.
  3. Bake the bread for 8-10 minutes until the edges are golden and slightly crisp. Keep a close eye to prevent burning; they should remain tender inside with a light crunch on the edges.
  4. While the bread bakes, mix the softened cream cheese with chopped herbs in a small bowl until well combined. This creates a flavorful, creamy spread.
  5. Once the bread is toasted and slightly cooled, spread a generous layer of the herbed cream cheese on half of the bread slices using a small spoon or spatula.
  6. Layer thin slices of deli meats on top of the cream cheese, then add a slice of pickle for a satisfying crunch and zing.
  7. Top with the remaining bread slices, pressing gently to seal the fillings inside and form compact mini sandwiches.
  8. Optional: Use a fork to gently press the edges of each mini sandwich to create a decorative seal or pattern, then refrigerate for 15 minutes to help fillings set.
  9. Just before serving, cut the assembled sandwiches into smaller bites if desired and arrange them on a platter. Garnish with extra herbs or tiny pickle slices for visual appeal.
