Ingredients
  

  • 2 cans 15 ounces each chickpeas, drained and rinsed
  • ½ cup tahini
  • ¼ cup fresh lemon juice
  • 2 garlic cloves minced
  • 3 tablespoons extra-virgin olive oil
  • ½ teaspoon ground cumin
  • ¾ teaspoon salt or to taste
  • 3 to 5 tablespoons cold water as needed
  • 2 tablespoons fresh parsley chopped, for garnish

  • 1 tablespoon extra-virgin olive oil
  • ½ teaspoon paprika

Method
 

  1. Add the tahini and fresh lemon juice to a food processor and blend for about 30 to 60 seconds until smooth and creamy. This helps create a lighter, silkier hummus texture.

  2. Add the chickpeas, garlic, cumin, and salt to the processor. Blend until the mixture starts coming together, scraping down the sides as needed.
  3. Slowly drizzle in the olive oil while blending. Continue processing until the hummus becomes smooth and creamy.

  4. Add cold water, one tablespoon at a time, and blend again until the hummus reaches your preferred consistency. Add more water if you prefer a lighter and smoother dip.

  5. Taste the hummus and adjust the seasoning by adding more lemon juice, salt, or cumin according to your preference.
  6. Transfer the hummus to a serving bowl and use the back of a spoon to create a shallow swirl on top.
