- Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper or a silicone mat for easy cleanup.
- Wash and peel the carrots, or scrub thoroughly if organic and unpeeled. Cut them into uniform 2-3 inch pieces to ensure even roasting.
- In a small bowl, whisk together honey, olive oil, minced garlic, thyme leaves, and a generous pinch of salt and pepper until well combined.
- Arrange the carrot pieces on the prepared baking sheet in a single layer, spacing them out for even roasting.
- Drizzle the honey mixture evenly over the carrots, then toss gently with tongs or a spatula to coat all sides thoroughly.
- Place the baking sheet in the oven and roast for about 25-30 minutes, tossing once halfway through, until the carrots are tender and edges are deeply caramelized.
- Check for doneness by piercing a carrot piece with a fork — it should slide in easily, and the edges should be sticky and golden brown.
- Remove the carrots from the oven and let them rest for 5 minutes, allowing the flavors to settle and the glaze to set slightly.
- Finish with a light sprinkle of fresh herbs or additional salt if desired, then serve warm, enjoying their tender insides and caramelized exteriors.
Notes
For a milder garlic flavor, roast whole cloves separately or add garlic later in the roasting process. Dried herbs can be used in place of fresh; add earlier to deepen their flavor. Adjust honey quantity to balance sweetness as desired.
