  • 1 cup fresh spinach
  • 2 large eggs
  • cup honey or maple syrup
  • ¼ cup milk
  • ¼ cup melted coconut oil
  • 1 teaspoon vanilla extract
  • cups whole wheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt

Method
 

  1. Preheat the oven to 350°F (175°C) and line a muffin pan with muffin liners.
