Ingredients
  

  • 1  lb about 450 g carrots, peeled and cut diagonally into coins or sticks
  • 2  Tbsp olive oil or unsalted butter
  • 3 –4 cloves garlic minced
  • 1  tsp fresh rosemary chopped (or ½ tsp dried)
  • 1  tsp fresh thyme leaves or ½ tsp dried
  • Salt and freshly ground black pepper to taste
  • Optional fresh parsley or dill finely chopped (for garnish)

Method
 

  1. Preheat oven to 400°F (200°C) for roasting, or heat a large skillet over medium heat if sautéing.
  2. Place the prepared carrots in a large bowl. Drizzle with olive oil or melted butter and sprinkle with minced garlic, rosemary, thyme, salt, and pepper. Toss until carrots are evenly coated.
  3. Add the carrot mixture to the hot skillet. Cook, stirring occasionally, until carrots are tender and fragrant, about 10–12 minutes.
  4. Remove from heat and sprinkle with fresh parsley or dill if using.
