  • 2 1/2 cups all-purpose flour for the cookie crust
  • 1 cup granulated sugar for the cookie crust
  • 1 cup unsalted butter softened, for the cookie crust
  • 1 large egg to bind the cookie dough
  • 1 tsp vanilla extract for flavor
  • 8 oz cream cheese softened, for the glaze
  • 1 cup powdered sugar for the glaze
  • 2 tbsp milk to loosen the glaze
  • 1 pint strawberries hulled and chopped
  • 2 kiwi kiwi peeled and sliced
  • 1/2 cup blueberries rinsed and drained
  • 1 banana banana sliced
  • optional fresh mint leaves or honey for garnish
