Ingredients
  

  • 4 medium zucchini
  • 2 large eggs beaten
  • ¾ cup Italian-style breadcrumbs
  • ¾ cup panko breadcrumbs
  • ¾ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • ¾ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • Vegetable or canola oil for frying
  • 2 tablespoons chopped fresh parsley

  • Marinara sauce
  • Ranch dressing

Method
 

  1. Wash and dry the zucchini, then cut each one into fry-shaped sticks about 3 inches long and ½ inch thick.
  2. In a shallow bowl, combine the Italian breadcrumbs, panko breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and black pepper. Place the beaten eggs in a separate bowl.
  3. Dip each zucchini stick into the beaten eggs, allowing any excess to drip off. Roll it in the breadcrumb mixture, pressing gently so the coating sticks evenly. Arrange the coated zucchini on a baking sheet while you finish the remaining pieces.
  4. Heat about 2 inches of oil in a deep pot to 350°F (175°C).
  5. Working in small batches, carefully lower the zucchini fries into the hot oil. Fry for 2 to 3 minutes until golden brown and crispy, turning occasionally for even cooking.
  6. Transfer the fried zucchini fries to a wire rack or paper towel-lined plate to drain excess oil.
  7. Sprinkle immediately with chopped parsley and an extra pinch of Parmesan if desired.
  8. Serve hot with marinara, ranch dressing, garlic aioli, or your favorite dipping sauce.
