Ingredients
  

  • 2 pounds chicken wings separated into drumettes and flats
  • ½ cup all-purpose flour
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon cayenne pepper optional
  • ¾ teaspoon kosher salt divided
  • ½ teaspoon freshly ground black pepper
  • 6 cups canola or vegetable oil for frying

  • Honey garlic sauce
  • Sauce

Method
 

  1. Pat the chicken wings completely dry with paper towels. Season them with half of the salt and a few grinds of black pepper.
  2. In a large bowl, whisk together the flour, paprika, garlic powder, onion powder, cayenne pepper, the remaining salt, and black pepper until evenly combined.
  3. Add the wings to the flour mixture and toss until each piece is lightly and evenly coated. Shake off any excess flour.
  4. Heat the oil in a Dutch oven or deep fryer to 350°F (175°C). Place a wire rack over a baking sheet to drain the cooked wings.
  5. Working in batches, carefully lower the wings into the hot oil. Fry for 8 to 10 minutes, turning occasionally, until the coating is crisp, golden brown, and the chicken reaches an internal temperature of 165°F (74°C).
  6. Transfer the wings to the prepared wire rack and allow them to rest for a few minutes before serving.
  7. Enjoy them as they are or toss them in honey garlic sauce, or your favorite wing sauce.
  8. Serve immediately with ranch or blue cheese dressing and fresh celery sticks.
