Ingredients
  

For the Potato Filling
  • 4 medium russet or Yukon Gold potatoes about 1½ pounds, boiled and peeled
  • 2 tablespoons finely chopped fresh cilantro
  • 1 small green chili finely chopped
  • ½ teaspoon ground cumin
  • ½ teaspoon garam masala
  • ½ teaspoon red chili powder
  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon amchur powder
  • ½ teaspoon chaat masala
  • ¾ teaspoon salt or to taste
For the Bread Rolls
  • 10 slices soft white or whole wheat bread
  • ½ cup water for moistening the bread
  • 3 to 4 cups neutral oil for deep frying

Equipment

  • Large pot or pressure cooker
  • Mixing bowl
  • Potato masher or fork
  • Cutting board
  • Deep skillet, kadai, or Dutch oven
  • Slotted spoon
  • Paper towels

Method
 

  1. Boil the potatoes until tender, then peel and mash them in a large bowl. Mix in cilantro, green chili, cumin, garam masala, red chili powder, black pepper, amchur, chaat masala, and salt.
  2. Divide the seasoned potato mixture into 10 portions and shape each one into a compact oval or log.
  3. Remove the crusts from the bread slices. Quickly dip one slice in water, then gently press it between your palms to remove excess moisture.
  4. Place a portion of the potato filling in the center of the softened bread. Roll the bread tightly around the filling and press the edges together to seal. Repeat with the remaining bread and filling.

  5. Heat oil in a deep skillet or kadai over medium heat. Test the oil by dropping in a small piece of bread it should sizzle and rise gently.

  6. Carefully fry the bread rolls in batches, turning occasionally, until golden brown and crisp on all sides. Avoid overcrowding the pan.
  7. Remove the rolls with a slotted spoon and drain on paper towels. Serve hot with green chutney, tamarind chutney, or tomato ketchup.
