Ingredients
  

For the Cowboy Caviar
  • 1 can 15 ounces black beans, drained and rinsed
  • 1 can 15 ounces black-eyed peas, drained and rinsed
  • cups sweet corn kernels
  • 2 large Roma tomatoes diced
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • ½ medium red onion finely chopped
  • 1 jalapeño seeded and finely chopped
  • ½ cup fresh cilantro chopped
  • 1 avocado diced
For the Lime Dressing
  • ¼ cup extra-virgin olive oil
  • 3 tablespoons fresh lime juice
  • 2 tablespoons red wine vinegar
  • 1 teaspoon honey
  • ½ teaspoon ground cumin
  • ½ teaspoon chili powder
  • ½ teaspoon salt or to taste
  • ¼ teaspoon freshly ground black pepper

Method
 

  1. Add the black beans, black-eyed peas, corn, tomatoes, bell peppers, red onion, jalapeño, and cilantro to a large mixing bowl. Gently toss the ingredients together until evenly combined.

  2. In a small bowl, whisk together olive oil, lime juice, red wine vinegar, honey, cumin, chili powder, salt, and black pepper until the dressing is well blended.
  3. Pour the lime dressing over the bean and vegetable mixture. Toss gently until all ingredients are coated with the flavorful dressing.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to blend together. For the best taste, let it chill for a few hours before serving.

  5. Just before serving, gently fold in the diced avocado to prevent it from becoming mashed or browning too quickly.
