- Preheat Oven: Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Prepare Strawberries: Roughly chop freeze-dried strawberries into small pieces and set aside.

- Mix Dry Ingredients: In a bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.

- Cream Butter & Sugar: In a large bowl, beat butter and brown sugar until light and fluffy.

- Add Egg & Vanilla: Add egg and vanilla extract, then beat until smooth and slightly fluffy.
- Combine Mixtures: Add dry ingredients to the wet mixture and mix until just combined.

- Fold Mix-ins: Fold in chopped strawberries and chocolate chips evenly into the dough.

- Shape Cookies: Scoop dough portions onto baking sheet, spacing them about 2–3 inches apart.

- Bake Cookies: Bake for 10–12 minutes until edges are set but centers remain soft.

- Cool Cookies: Let cookies cool on the baking sheet for 10–15 minutes.
Chocolate Coating:
- Melt Chocolate: Microwave chocolate chips and coconut oil in 30-second intervals, stirring until smooth.

- Dip Cookies: Dip the bottom of each cooled cookie into melted chocolate and place back on parchment paper.
- Drizzle (Optional): Drizzle remaining chocolate over the tops if desired.

- Set Chocolate: Let cookies sit for 20–30 minutes until chocolate is fully set.
