Ingredients

  • 1 cup peanut butter creamy preferred
  • 1/2 cup honey or maple syrup for binding and sweetness
  • 1 teaspoon vanilla extract optional but adds flavor
  • 2 cups rolled oats gluten-free if needed
  • 1 cup chocolate chips semi-sweet recommended
  • 1/2 cup chopped nuts optional such as walnuts or almonds

Equipment

  • 8x8-inch pan
  • Microwave-safe bowl
  • Spatula or sturdy spoon
  • Parchment paper
  • Knife or pizza cutter

Method

  1. Line your 8x8-inch pan with parchment paper, leaving some overhang for easy removal.
  2. Place the peanut butter and honey in a microwave-safe bowl and heat for 1-2 minutes, stirring halfway through until smooth and fragrant, with a slightly bubbly sound.
  3. Add vanilla extract to the melted mixture and stir until well combined—this helps infuse the aroma throughout.
  4. In a large bowl, combine the oats, chocolate chips, and chopped nuts if using, mixing them evenly for a hearty base.
  5. Pour the warm peanut butter mixture over the dry ingredients, stirring thoroughly with a spatula until everything is coated and sticky, with the oats slightly glistening.
  6. Transfer the mixture into the prepared pan, pressing it down firmly with the back of a spatula or your hands to create an even, compact layer.
  7. Place the pan in the fridge and chill for at least 2 hours until the mixture is set, firm, and easy to cut.
  8. Once chilled, lift out the entire block using the parchment overhang and cut into 12 even squares with a sharp knife or pizza cutter.
  9. Enjoy these chewy bars at room temperature or chilled, packed in an airtight container for a portable snack or quick treat.

Notes

For extra flavor, sprinkle a pinch of sea salt on top before chilling. You can also customize with your favorite add-ins like dried fruit or seeds.
