Ingredients
  

For the Cake:
  • 2 cups all-purpose flour 250g
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon cinnamon optional
  • ½ cup unsalted butter softened (115g)
  • ¾ cup granulated sugar 150g
  • ½ cup brown sugar 100g
  • 2 large eggs
  • 1 cup mashed ripe bananas 2–3 bananas
  • 1 teaspoon vanilla extract
  • ½ cup buttermilk 120ml
  • 1 cup chocolate chips 170g
For the Caramel Buttercream
  • ½ cup unsalted butter softened
  • cup caramel sauce
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 –3 tablespoons milk or cream
  • Pinch of salt
Optional Garnish:
  • Chocolate chips
  • Banana chips
  • Extra caramel drizzle

Equipment

  • 2 round cake pans (8-inch or 9-inch)
  • Mixing bowls
  • Electric mixer or whisk

Method
 

  1. Preheat Oven: Preheat oven to 350°F (175°C) and grease and line two cake pans with parchment paper.
  2. Mix Dry Ingredients: In a bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  3. Cream Butter & Sugar: In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add Eggs & Banana: Add eggs one at a time, then mix in mashed bananas and vanilla extract until smooth.
  5. Combine Wet & Dry: Add dry ingredients in two parts alternating with buttermilk, mixing just until combined.
  6. Add Chocolate Chips: Fold in chocolate chips evenly into the batter.
  7. Fill Pans: Divide the batter evenly between the prepared cake pans.
  8. Bake Cake: Bake for 30–40 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool Cakes: Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
Make Frosting:
  1. Beat Butter: Beat softened butter until smooth and creamy.
  2. Add Caramel & Vanilla: Mix in caramel sauce, vanilla extract, and salt.
  3. Add Sugar: Gradually add powdered sugar and beat until combined.
  4. Adjust Consistency: Add milk or cream as needed and beat until light and fluffy.
Assemble Cake:
  1. Layer Cake: Place one cake layer on a plate and spread frosting evenly on top.
  2. Add Second Layer: Place the second cake layer on top.
  3. Frost Cake: Spread remaining frosting over the top and sides.
  4. Garnish: Top with chocolate chips, banana chips, or drizzle caramel if desired.
