Preheat the oven to 400°F (200°C). Place the block of feta in the center of a medium baking dish.
Add the cherry tomatoes, Kalamata olives, pepperoncini, sun-dried tomatoes, and garlic to a bowl. Drizzle with olive oil and season with Italian seasoning, dried basil, red pepper flakes, salt, and black pepper.
Toss the vegetables and olives until evenly coated, then arrange them around the feta in the baking dish. Drizzle any remaining seasoned oil over the feta and finish with the honey.
Bake for 20 to 25 minutes, until the tomatoes are softened, the garlic is tender, and the feta is warmed through.
Switch the oven to broil and cook for 1 to 2 minutes, watching closely, until the feta and vegetables develop lightly browned edges.
Remove the baking dish from the oven and sprinkle the fresh basil over the top. Let it cool for a couple of minutes and serve the warm feta dip directly from the baking dish with toasted baguette slices, pita chips, crackers, or fresh vegetables for dipping.
