Ingredients
  

For the Skewers
  • 12 ciliegine or small fresh mozzarella balls
  • 12 cherry tomatoes
  • 12 slices Genoa salami folded
  • 12 slices prosciutto folded
  • 12 Kalamata olives pitted
  • 12 marinated artichoke heart pieces
  • 12 pepperoncini
  • 12 small pieces roasted red pepper
  • 24 fresh basil leaves
  • 12 small cubes provolone cheese
For the Italian Dressing
  • ¼ cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Italian seasoning
  • 1 teaspoon honey
  • 1 small garlic clove minced
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper
For Finishing
  • 2 tablespoons balsamic glaze

Method
 

  1. Whisk together the olive oil, red wine vinegar, lemon juice, Italian seasoning, honey, garlic, salt, and black pepper in a small bowl until well combined.

  2. Place the mozzarella balls in a small bowl and toss with 2 tablespoons of the Italian dressing. Cover and refrigerate for at least 15 minutes to let the flavors develop.

  3. Drain the artichokes, olives, and pepperoncini well. Cut the roasted red pepper into bite-sized pieces and pat the tomatoes and basil dry to keep the skewers neat.

  4. Thread one piece of roasted red pepper, an olive, folded salami, a basil leaf, and a marinated mozzarella ball onto each skewer. Keep the ingredients close together without packing them too tightly and continue threading each skewer with an artichoke heart, cherry tomato, another basil leaf, folded prosciutto, provolone cube, and pepperoncini.

  5. Place the finished skewers on a large serving platter. Drizzle lightly with the remaining Italian dressing, making sure the ingredients are evenly coated.

  6. Drizzle the skewers with balsamic glaze just before serving. Serve immediately, or refrigerate the assembled skewers covered until ready to serve.
