Scrub the russet potatoes thoroughly and leave the skins on. Cut each potato in half lengthwise, then cut each half into 3-4 evenly sized wedges.
Place the potato wedges in a large bowl of cold water and let them soak for 15 minutes. Drain thoroughly and pat them completely dry with a clean kitchen towel.
Add the dry potato wedges to a bowl and drizzle with olive oil. Sprinkle in the garlic powder, Italian seasoning, smoked paprika, chili powder, salt, and black pepper, then toss until every wedge is evenly coated.
Preheat the air fryer to 400°F for about 3 minutes. Lightly grease the basket if needed to prevent sticking.
Place the seasoned potatoes in a single layer in the air fryer basket, leaving a little space between the wedges. Cook in batches if necessary, as overcrowding can prevent them from becoming crisp.
Cook at 400°F for 13-15 minutes, shaking the basket or turning the wedges halfway through cooking. Continue for another minute or two if needed until the edges are deeply golden and crisp and transfer the hot wedges to a serving plate and sprinkle with Parmesan and fresh parsley or cilantro, if using. Serve with your favorite dipping sauce.
